Breakdown Schooner assembly/dissambly

Can anyone walk me through the exact procedure of maneuvering and
putting together, taking apart, flooding and emptying ballast tanks,
the three pieces of BDS? All in the water from trailer to ramp to dock
or mooring? I've read BWOM and the full set of plans, and would pay
money for a video of the whole sequence. How long does it take an
experienced crew? How large a crew?
