Hi Pippo,
Since the folks in US probably are still horizontal, I will give you a rather incomplete response.
Set flying means that the sail is not attached to a stay. Thats why the sail needs a rope sewn into the front edge to keep it from being thorn apart in the wind. My "William D Jochems" has two sails "set flying".
Have you come to a conclusion yet (what boat to build)?
