Congratulations!!! Your boat is a beauty!!!
About your outboard, if it coughs and dies it could be that the idle
mix is too lean at idle. Outboard carbs do not have an accelerator
pump and if the idle mixture is too lean they will not accelerate.
Try opening(richening) the idle mixture knob a small amount.

needed to set the tilt on the motor with the propeller in the aft
most position and it made all the difference. The transom on the
Sneakeasy is at quite an angle. Other than that she makes no wake to
speak of, it seemed to be 2 or 3 inches high. It left me with a
dilema in that the inner harbor is a "No Wake" zone. I was doing 12
knots but making no appreciable wake!! What is a guy to do??? Slow
Down???? I just couldn't!!! She was very smooth even crossing wakes
