I used the MDO (single overlay, not both faces) , but on the side with the overlay ( interior of the boat) planed off the overlay anywhere a structural joint was to be made (stitch and glue fillets and tape) . Flat surfaces were going to get paint so were just epoxy coated and painted. . Outside was fir plywood surface with epoxy / glass sheathing.

Remember the MDO is wasted on a surface which is to be sheathed. It just gives a smooth check free surface for the paint. If the whole thing is to be sheathed, use fir marine ply or other.

The MDO I used was covered in paper which was not saturated with glue
but glued to the wood. The glue survived boiling but you could peal the
paper layer off. The paper layer readily soaked up water and soaked up
epoxy like a sponge, about 5 gallons. In fact, I could coat it with a
liberal coat of epoxy and five minutes later large sections of it
appeared dry so I would have to recoat minutes later. I don’t think the
epoxy penetrated the glue layer into the wood. It did produce a very
tough outer layer of epoxy/paper about a 32nd of an inch thick. If I
had it to do over again, I’d just use luan for the sides and top and b/c
fir for the bottom.

Th3e short answer is "make sure it's clean" and otherwise you should

MDO is good wood. In the 18 month's I've messed with it, I've found ONE very small void.
