I would guesstimate about 2 to 2 and a half gallons ought to do
it. Some might say less but depending on your experience with
working with epoxy,there may be more waste then expected.
If you are tempted by copper flakes for your bottom because of
the looks,then you may as well glass the bottom and just buy the
copper coloured anti-fouling paint. Glass cloth by the yard is not
all that expensive when compared to finished rolls of
glass"tape".Also,it will do wonders for keeping the bottom safer from
little accidents with hard objects and you still end up glassing the
chines anyway with the cloth.For a plywood boat that will not be in
the water"24/7" the glassed bottom will also have less tendency to
check when left dry for long periods of time.
Depending on how tight the cash is, you could always build this
boat paycheck-to-paycheck since you may not be able to
consume/produce faster then you earn thus there is little point in
holding off until all your materials are bought and with so few
materials needed for this fine little boat,there are no cost savings
buying in quantity........

Well, I've been busy with work and haven't had a chance to study my
Surf plans in as much detail as I'd like yet but I don't remember
seeing a note on the "recommended" amount of expoxy?
I'm planning on using epoxy to glue the butt joints and to use
epoxy+glass strips to reinforce the chine joints. I probably won't
sheathe the entire bottom in glass.
How much epoxy should I order for the Surf if I plan to only do glass
strips?
How much if I plan on sheathing the entire bottom?
I'm probably not going to be able to work on another boat project
after the Surf (company is "downsizing", argh) for a while so I don't
think I'll buy gallons of the stuff to have on hand yet. :)
