The chine log is not necessary in a true stitch and glue design.
However, some still use fiberglass/epoxy to reinforce and provide
abrasion resistance to chine logs. In a stitch and glue design the
fiberglass tape is applied to both sides of the joint. Ideally the
joint has a small gap up to 3/8 inch between the panels. This gap is
filled with a wood flour/epoxy mix. You might want to see the
