Many of us do NOT encapsulate every boat we build. Having lost my share
of a very nice little boat from delamination when some snow got into it
(we had thought the spot sufficiently sheltered), I am very aware of
this issue.

Howdy
for my trailer bed. I put 2 coats of spar varnish on it. I live in the
desert, but it did rain about 2" this summer, and that sheet of plywood
bubbled up. Obviously NOT exterior grade wood. The boil test would have
told me that. So I do a boil test combined with some time in the dishwasher
just for my own piece of mind.
