Conrad Natzio in England did exactly this, even giving her a 'slipper'-style stern. A very elegant river boat resulted.

There are some pics of the first plans built Tennesee planing happily
w about 12 hp, despite the significan rocker.

IMO the boat may to better with the rocker left in, at heavy loads,
moving at hull speed. Bet it would still plane well lightly loaded.

2nd, IMO you would need to use a tiller extension and NOT sit all the
way back to handle the motor. The deck back there is intended to keep
the pilot's weight forward.

But, no expert here.
I built one with the rocker in the stern and ran it with a 2.5 hp
yamaha. worked well, the 2.5 would push it at hull speed with 400 lbs
of parent and two kids. sure it would work better with straight
stern, though. very easy boat to build.

You can do that. Here's another similar, just a little longer and with more
sheer. The on screen image is not so good but should print better.
