The bottom of my schooner is a single 3/8 ply, sheathed on the outside.
There is oilcanning occasionally, especially in the forward section,
but since I rarely sit in the forward section I have little experience
with it. I sit in the middle of the aft section sitting on the butt
splice which stiffens that area, so I never notice it. The California
FS was mentioned in a letter in The Small Boat Journal many years ago,
and the person was offering the plans of an A-frame to single-hand
folding the schooner. He wanted $35 bucks for it so I never bothered.
It takes two people to sail the boat and two people can easily
(usually) open and close the boat. We have dropped the boat in both
directions over the years with no damage. The usual cause is not
having pulled the hull far enough up the ramp to get a good friction
grip on the keel strip and she slides back into the water when you are
lifting.
