So far the candidates for designs with buildable plans are...

Bolger Pirate Racer
Bolger Brigantine
Bolger Chebacco with cosmetic modifications
Welsford Swifsure
Stevenson Weekender

Of these, I should probably just built a Pirate Racer (the lateen
sail would fit right in here in Tunisia where we live at the
moment). Another open boat that might work for the kind of family
daysailing that I'd really be doing most of the time is Japanese
Beach Cruiser, which would look right for the period, anyway, with a
mock swivel gun on the bow.

Those are nice boats, but I was really thinking of something with
accommodations of some kind like the Grandpa's Pirate Ship concept
design.

Any other candidates?
Hi Ed & Group, I would hardly call anything in this string spam, it's absurd, the Swiftsure is almost perfect as is, where the Chebacco modification would require more than a bowsprit to achieve the desired effect, he has to consider his own skill levels in the job. He did ask for ideas using Swiftsure as an example of what he has in mind, your idea is a good one but lacks what would actually be involved to reach the desired appearance such as an addition of applied false stem & other decorative features.
