Two adults can fit in a Teal while sailing, but it is starting to get
tight. You sail while seated on the bottom of the boat, and the
movable seat is only used while rowing, and slid out of the way while
sailing.

Can't speak for the as-designed seats. I didn't make any.
Instead, I cut down a plastic coke crate, inverted it, glued foam to the
top & tied plastic tube around the bottom as feet. Much more stable.
Apart from that I should think no worries. Just pass your seat across
each time you tack.
Teal is fairly tender & twitchy. More like a fat canoe than an armchair.
How relaxed you will be depends on wind strength & constancy more
than anything else. Wind here in South Oz seems to be stronger than
the waters Phil designed her for. First thing I did was reduce the sail
area.
