Thanks for the help fella's. I figured epoxy was the glue of choice, but just needed some reassurance.

galvanized pipe, threaded both ends with caps, perfect!

Similar for me on my Topaz Spyder, except that I used 1" silicon
bronze round stock... epoxied in place. For a workboat type finish I
am sure that galvanized steel pipe would work just fine tool.
In my Bolger Micro trawler and my Bantam I used solid 1/2" stainless steel round stock, the length cut so that 2 1/2" project out from both sides of the post. I roughen up the center section that will be in the post with a course file, and make a few grooves with the edge of a grinding wheel. I then epoxy them in place, making sure the wood hole is completely saturated so there is no starvation. The Micro trawler is now 15 years old and they are still perfect, never having loosened. The epoxy is thickened, as for glue.

Well i'm progressing on my modified Tennessee and I'm ready to insall cleats .

I've decided I'd rather use the cross shaped tow bits that Phil shows on so many of his designs instead of store bought cleats.

I've got some very nice Doug Fir posts. What is the common material and size of the cross piece? is it pipe or heavy dowel ?

if it is pipe, how do you fasten it in the post so it stays ??
