I'd look to using the trailer winch to assist in pulling the cabin erect. IMO the original design is elegant as is.

Given how unpredictable aerodynamics is, I would not want to bet too much that you are going to save all that much fuel by taking the windows out of the cabin, if I understand your idea about the windows right. And from the fuel point of view the canvas cover would probably amount to the same thing as the windows, would take a lot of time and money to get right, and you would have to be very careful you didn't shred the thing as it chafed while driving.

Probably the simplest and least fiddly thing would be to build the cabin as designed, and then figure out a way, perhaps a brace and clamp or whatever, to ease the job of taking down the cabin alone. Or it may be that once you are building it, you see a simpler or better way to put the thing together. Though of course it depends on if you are planning twice-weekly afternoon trips to the local reservoir, or longer cruises farther away and less often.

Seems to me that you'd pick up a lot of road grit, dust, and smashed bugs. Of course, the bug problem would be far worse if you leave the windows in!

My Microtrawler is set up like this, and it has worked out well for many years. Yes, you have to secure light items from blowing out or being sucked out when trailering. Another problem is towing when it's raining. Not so much the clean rain, but the dirty water road spray can make a mess. I box, bag or wrap things and use a hose at the launch ramp to rinse everything down just before launching.
