I have done it that way using two layers of ply with the butt joints
alternating.

Generaly speaking, if the bottom is over four feet wide, it is thick enough
to do in two or more layers. So you plank your four foot sections, making
sure the joints are aways apart.

Now, the interesting question, what do you do when the bottom is over eight
feet wide... :)
