Waterproof in relation to plywood glue means it does not  dissolve in water, not to its water barrier properties.
even if it was; every screw, nail, incompletely filled end grain joint will destroy the seal.

I was up visiting at the Great Lakes Boatbuilding School in Cedarville, MI twoyears ago and they used something like this rolled on the interior ( below the waterline) of a 18' strip-built work/fishing skiff as non-skid and I thought it was pretty neat. The boat in question was epoxied and 'glassed inside and out, very well done to a pretty high level of finish. The application was very neatly done. I thought it was a really clever solution and if properly taped off etc., on a well-applied epoxy finish, would look good, be quiet, durable and comfortable on bare feet.

Breathe on one side doesn't make any sense to me, at least with plywood. There are waterproof layers of glue between the wood layers.

Sam Devlin has used the spray on bed liner for pick up trucks on the interior of his Candlefish design and apparently it works well.

Don't know.
George Buehler suggests roofing sealant between plywood layers, something like Blackjack IIRC.

Schools of thought are divided between the "seal it all thoroughly,Inside and out, epoxy/cloth is probably best" group and the "one side needs to breathe" group.

Ive wasted a boatload of money on budget workarounds that weren't!
Maybe two boatloads, and approaching three...
