I feel your pain. I have a Payson's Pirogue I started 2 years ago that is sitting in storage because I haven't had the time to coat it.
For me it wouldcome down to the question: "If I do not have the time to finish the project, will I have time to enjoy and maintain her after she's finished?" If that answer is no, then I would sell her.
