Though I haven't built a lot of boats out of the stuff, SYP ply is
not expensive and it is readily available at place like Home Depot.
The problem is finding a piece that is not too knotty or warped. I
built a folding dinghy out of 3/8" Ext AC SYP that is just sealed
with varnish, and it has survived several Bahama trips. You can

have a real fancy project I might recommend fir marine ply instead.
