I think the notches will be necessary to get the chine in the correct place. Or on the Light Schooner are they attached to a panel first??

If you cut the notches a bit oversize, then you can use wedges or better yet temporary blocks screwed to the sides of the frames to hold the chine log just where you want it,- a nice fair curve. Then after attaching the planking, remove the wedges/blocking and fill with googe.

If standing water and rot are a concern, make the notches way oversize and leave them open as limberholes. Course then you would want the top of the chine beveled or sloped with a fillet to drain off any standing water, and then......

 But you must have them for the the log. It's pretty easy to
get them close enough. I used hand saw to make sure I went slow
enough to do it right.(Well, pretty right. Right enough.)
